
The LaLiT Ashok Bangalore has appointed Chef Shahul Hameed as its new Executive Chef, bringing more than 23 years of culinary experience spanning leading hospitality brands, international kitchens, and diverse dining environments.
In his new role, Chef Shahul will oversee the hotel’s banquet operations, specialty dining, and overall culinary direction. His focus will be on bringing together authentic flavours, contemporary culinary techniques, and regional influences to create memorable dining experiences for guests.
With a career that has taken him from renowned hotels in India to cruise kitchens in the United States and hospitality properties in Saudi Arabia, Chef Shahul brings an international perspective to kitchen leadership, along with a strong appreciation for regional cuisine and traditional cooking.

From Chennai to International Kitchens
Chef Shahul began his culinary career in Chennai in 2002, marking the start of a journey across some of the hospitality industry’s recognised names. His professional experience includes The Leela Palace Bangalore, Taj Vivanta Bangalore, Carnival Cruise Line in the USA, Millennium Hotel in Saudi Arabia, the Adarsh Group, and ITC Fortune Select Trinity, now known as Trinity by Marriott.
His time working in international kitchens played an important role in shaping his approach to culinary management and teamwork. During his stint with Carnival Cruise Line, he collaborated with professionals representing more than 50 nationalities, gaining exposure to different culinary traditions, working styles, and kitchen cultures.
While working in the Middle East, Chef Shahul also taught himself Arabic within three months to communicate more effectively with his team and manage kitchen operations. The experience reflects his practical approach to leadership and his willingness to adapt to different professional environments.

At the heart of Chef Shahul’s culinary approach is a belief in the warmth and familiarity of home-style cooking, supported by professional technique, seasonal ingredients, and thoughtful presentation.

This approach will guide his work at The LaLiT Ashok Bangalore as he develops dining experiences that connect traditional influences with contemporary expectations.
