To lead its next culinary chapter, the hotel has appointed Chef Manoj Padmanaban as its new Executive Chef. A seasoned veteran of the luxury hospitality scene, Chef Manoj’s transition to this iconic property marks a strategic move to blend timeless tradition with modern culinary innovation.
Over the course of his career, Chef Manoj has worked with leading luxury hotels including ITC Windsor, ITC Kohenur, ITC Gardenia, and The Leela Palace Bengaluru. He has held senior kitchen leadership roles such as Assistant Master Chef and Senior Sous Chef, overseeing high-volume and multi-outlet culinary operations. His experience spans all-day dining restaurants, specialty cuisines, in-room dining, and large-scale banqueting, giving him a well-rounded operational perspective.
A graduate in Hotel Management from Bangalore University, Chef Manoj is recognised for his methodical approach to kitchen leadership. His work places strong emphasis on food safety, process-driven execution, and contemporary culinary practices. He is also known for building cohesive teams and aligning menus with evolving guest preferences while staying true to brand standards. Seasonality, precision, and presentation remain central to his culinary philosophy.
In his new role at ITC Windsor, Chef Manoj will oversee all culinary functions across the hotel. His responsibilities include menu planning, ensuring operational consistency, and enhancing dining experiences across restaurants and banquet venues.
