ITC Hotels has announced the appointment of Gaurav Lavania as the new Executive Chef at its flagship property, ITC Maurya. Bringing with him more than 25 years of experience in the hospitality industry, Chef Lavania will spearhead the hotel’s culinary operations. His role will include overseeing its celebrated restaurants as well as managing large-scale banquet offerings, reinforcing the property’s long-standing reputation for refined and memorable dining.

Over the course of his career, Chef Lavania has built a reputation for creating impactful dishes using simple, thoughtfully chosen ingredients. His cooking style focuses on clean presentation while staying true to authentic flavours. Rather than overcomplicating, he lets the essence of each ingredient shine through.

He is also a strong advocate of sustainable practices, often prioritising locally sourced produce and drawing inspiration from regional Indian cuisines. His approach reflects a balance between tradition and modern technique, resulting in dishes that feel both rooted and relevant.

Prior to this appointment, Chef Lavania was part of the leadership team at ITC Narmada. Throughout his journey with ITC Hotels, he has contributed to several of the brand’s most recognised dining destinations. His experience spans iconic restaurants such as Peshawri, Dakshin, Yi Jing, The Pavilion, and Fabelle. His work across these outlets has been recognised for both innovation and consistency in quality.

With this appointment, ITC Maurya looks set to continue its focus on delivering elevated dining experiences, guided by a chef who values authenticity, sustainability, and thoughtful innovation.
